When you leave maysaf and you get on the horse.. is there a particular one you always choose?
I always choose the white one... it's like an OCD thing i have lmao! dnt ask.

i think it's because it's the closest one when you leave masyaf, and then i try to take him back again

I go for dappled horses, the uglier the better. What could be more picturesque than an Altair doing a flying assassination from the back of a beautiful black horse?
Why, Altair doing a flying assassination from the back of an ugly grey horse, of course!
Btw, speaking of the horses.... I'm not a huge equestrian history buff, but what are the odds that ALL of the people in 1194 use Turkish saddles?
And how is no one ever bothered by you just walking up and nabbing their horse?

Yeah... nice question. The 'horse for free' police is quite weird.
About the original question, I enjoy the variety. The white blends well with Altair's outfit. The black makes him look like a grim reaper, or something. And the brown looks beautiful under sunlight.

I always try to get in a fight, flee, grab the horse most near and rampage into teh people chasing me. Thats why i call all my horses Splatter.
Its also fun to rampage into groups of soldiers or random people.

I like the darker ones with socks, or the dapples. I'll even dismount to grab a new horse if I like the look of it better.
But at transitions, the horse changes color, so it's kinda moot sometimes :/
